Patisserie Platine by Waku Ghin
I’ve
been having a yearning for fine pastries and cakes lately. The gloomy
afternoons might have played a role in my craving, but don’t you agree that a
little sugar and colors are needed to brighten the day? So i wished and I got more than just that at Patisserie Platine, the latest patisserie by the award-winning restaurant Waku Ghin.
Designed by Chef Yasushi Ishino, Executive Pastry Chef of Waku Ghin, and created by Waku Ghin’s pastry team, expect exquisite masterpieces of pastries and cakes made using premium ingredients and fresh seasonal fruits from Japan and Europe.
The Ghin Cheese Cake ($12), a Waku Ghin signature, will change your mind on cheesecakes (even if you're not a fan)! True to Japanese cakes, this white dome features a lemon
cheese mousse and a lemon curd in the center that is refreshing and light. Just
like the intricate white chocolate feather lying elegantly on top.
There’s
also the Strawberry Cheesecake ($10) if you just got to have
strawberries in everything. The surprise in this lovely cake is the unique
combination of strawberry mousse and orange cheese mousse layers. Too pretty!
Coconut
Mousse with Mango & Passionfruit ($10) is a delight to the tropical
at heart. Under the vibrant orange is coconut mousse and layers of mango and
passionfruit. Expect bursts of flavors in this pretty little thing!
And in
such overcast weather, there must be a pick me up. The dessert that shot me to
heaven—Tiramisu ($11). Chocolate baba, espresso syrup and creamy
mascarpone in a glass with lots of chocolate pearls somewhere in the middle.
Need I say more? Pardon me while I make my way back to Earth.
My
favourite pastry is Yuzu Tarte ($10). Simple sounding, yet not. In my
opinion, it is the epitome of Japanese-French pastries. The buttery, thin and
crispy tart base is filled with a layer of olive oil sponge under the smooth
yuzu infused curd. Sweet meringue and candied yuzu are then added on top of
this comforting pastry. Trust me, this pastry is not as sweet as it sounds. It
is neither sticky saccharine nor cringing sour. It is YUZU. もう一個下さい!(One more please!)
There
are sweet surprises every month too! For July, Chef Yasushi Ishino has designed
Caramel Chocolate Mousse with Spice and Banana ($11) and Earl Grey
Chocolate Mousse with Orange and Vanilla ($10).
An earl
grey chocolate mousse (ooh!) with orange (ooooh!), vanilla, and encased in a
dark chocolate glaze, the Earl Grey Chocolate Mousse with Orange and Vanilla explodes
with equally balanced flavors of earl grey, orange, vanilla and
dark chocolate. Simple as it seems, the chocolate coated rice crispies base was
the winning component that gave the dessert the extra crunch to the otherwise
creamy texture. Definitely in my top 3.
Sharing
is caring. The Macaron Selection ($25 for a box of 12) is the perfect
gift to anyone if you want to share the joy! Such lightness in these little bites- crunchy shells with intensely flavored centers! This definitely puts Platine right on top of the macaron game in Singapore. The flavors include Rum Raisin,
Raspberry, Chocolate, Pistachio, Coffee, and Passionfruit
and Mango (there were bits of mango inside!). We liked all of them!
